Butter Measurements And Common Butter Conversions
I asked my followers on social media how they fill their glasses. Most take ingredients like flour or sugar out of the bag and then flatten the top, so this is the approach I used when measuring similaringredients in my calculations. I also like to squeeze the bag a little beforehand to break up any lumps.
In many conversion tables, 1 cup of flour is 120 g. However, I have found that the only way to get it that low is to sift the flour and then spoon the sifted flour into the cup. I don’t know about you, but I prefer to sift the flour after measuring, not before. So in my translations, you’ll see that a cup of flour weighs more because it reflects how I fill the cup.
I pour the ingredients in the smaller packages directly from the bag into the cup and smooth the top.
I push soft ingredients like butter or cream cheese into the cup with the back of a spoon to make sure all the crevices are filled, then smooth the top.

Accuracy is important in baking, so in my baking recipes I always recommend using grams if possible.
As I went through all the conversions of this calculator, I found that the way I fill the cup can make a big difference in how much of an ingredient I can put in.
In the picture below, two cups appear to be full of flour. However, the one on the right weighs more than 40% more than the one on the left, because I packed the flour as tightly as possible.
The official size of an American cup is 236.588 ml, but most of the cups you can buy in stores assume it to be 240 ml for simplicity (this is what I assumed in my calculation). However, some cup manufacturers sell 250 ml cups (but keep ½ cup in 120 ml!).
How Much Is A Cup Of Flour In Grams?
This isn’t a big deal as long as you know which one you own. The bigger problem is that not all cups sold are very accurate.
I own two sets of measuring cups and neither holds the amount it should. In one set, my ¼ cup holds 65ml (should be 60ml) but the full cup only holds 225ml when it should be 240ml (don’t worry, I’ve adjusted everything here to make sure it’s correct for the correct size cup).

Imagine measuring nuts. If you put them whole in a glass, they will fit much less than if you finely chop them before adding them to the glass.

There are also some ingredients like Nutella or Black Treacle that are difficult to remove from the cup after filling. You probably won’t take out everything you put in, so you might end up adding less to the mix than the recipe calls for.
Many scales have a tare button that lets you reset the scale to zero so you can continue measuring multiple ingredients in a bowl. That’s great because it means you can pour everything you need into the mix without messing around with lots of extra measuring equipment.
Imagine you have a recipe that calls for a cup of butter, flour, maple syrup, and Nutella (not sure what to do!). To get an accurate measurement, you need to have lots of cups or a washable cup between each ingredient before measuring the next one.
The skinny cup is just below the cup. How the measurements are going is a bit unclear! Likewise, the amount to put in a full glass can vary significantly depending on the shape of the glass. So I don’t use any of these descriptions in my recipes (that’s flat cup, tablespoon or teaspoon for me).
